How to Make Mexican Street Corn Soup

STEP 1:
Add ¼ cup of oil to a large, nonstick pot over medium-high heat.
Add 6 cups of corn, your chopped onions, chili powder, salt, and pepper.
Allow the corn and onions to soften and stir frequently, for about 10 minutes.
STEP 2:
Stir in garlic until fragrant, for about 1 minute and remove 1 ½ cup of the corn mixture. Set aside.
Then, add chicken broth to the pot with the remaining corn mixture along with 6 of the stripped corn cobs.
Bring to a boil and let it simmer for 20 minutes.
STEP 3:
After 20 minutes, remove cobs and stir in sour cream and grated parmesan.
Pour corn mixture into a blender or food processor and blend until mixture is smooth and creamy.
When finished, add the corn mixture back to the large, nonstick pot.
Stir in ¾ of the corn that was set aside, along with lime juice, 2 tablespoons of cilantro and more seasonings if needed.
STEP 4:
Allow corn soup to reheat to desired temperature, meanwhile, create your garnish with remaining corn that was set aside.
Add 2 teaspoons of cilantro, lime zest and toss until combined.
Spoon a bowl full of the corn soup and top off with your corn garnish. Add extra Parmesan if needed and enjoy each rich and tasty bite!
