Simple Side Dish Recipes: Smash Potatoes

Crisp with a creamy decadence, this Smash Potato recipe is a keeper. Not to mention, you have lots of versatility with your buttery toppings and flavors like sweet and spicy with chives or garlic with Parmesan and parsley. STEP 1: Boil your Potatoes

Add 2 pounds of cleaned baby potatoes to a large pot of cold water. Put in 1 tablespoon of kosher salt for flavor and set over high heat.

When the pot reaches a boil, turn down the heat and allow the potatoes to simmer for about 20 minutes. Once the potatoes are tender, drain and allow the potatoes to cool slightly.

STEP 2: Prepare your Spread

While your potatoes are cooking, prepare your spreads. We are making a couple different versions today.

To prepare the garlic, Parmesan, and parsley spread, add 2 tablespoons of butter, 1 tablespoon of chopped parsley, ¼ cup grated Parmesan and 4 cloves of minced garlic to a bowl and mix until well combined.

For the honey sriracha spread, in a different bowl, add 2 tablespoons of butter, 1 tablespoon sriracha, 1 tablespoon honey, and 1 tablespoon of chopped chives. Mix until everything is combined, creamy, and delicious!

STEP 3: Smash your Potatoes

When the potatoes are cool, brush a baking sheet with half of each of the spread mixtures created in step 2. We used foil and created a divide so the spreads wouldn’t combine.

Add the potatoes and smash each one with the back of a fork or a drinking glass.

Season with salt and pepper and brush on the remaining spreads.

Roast for 10-15 minutes or until the potatoes are golden brown.
