Mouthwatering Bacon Wrapped Parmesan Potatoes with Blue Label Organic Herbs

There is something to be said about the delicious combination of melted cheese, crisp bacon, and savory potatoes. My mouth is watering just thinking about it.

In addition to freshness, growing your own herbs and preparing homemade Italian seasoning is also very cost efficient!

Before we get started, we need to make our seasoning.

DRYING HERBS AND MAKING HOMEMADE ITALIAN SEASONING

Step 1: PREPARE YOUR HERBS

Skip the line at the store for more Italian seasoning and use your fresh or even left over herbs! Drying your herbs is easy and money saving.

For this recipe, we will need basil, oregano, rosemary, and thyme.

Wash your herbs beforehand and make sure they are completely dry. Lay them flat on a cookie sheet and in a single layer. Depending on how much you are making, you may need multiple cookie sheets.

Step 2: DRY YOUR HERBS

Set your oven to the lowest temperature possible. Set your racks to the middle of the oven and bake for 30 minutes with the oven door slightly open. This will help let moisture out.

After 30 minutes, check your herbs. Rotate and bake for another 15 to 30 minutes if they are not ready yet. When the leaves crumble between your fingers, the herb is ready!

Allow your herbs to cool completely then use immediately, or store in an airtight container.

Step 4: MAKE YOUR SEASONING

Use 3 tablespoons of each of your dried basil, oregano, and parsley. Add 1 tablespoon garlic, 1 teaspoon dried thyme and rosemary, ¼ teaspoon pepper and crushed red pepper.

Now you have fresh Italian seasoning!

FIRST: MIX IT

In a large bowl, whisk together salt, pepper, garlic, Italian seasoning and parmesan. Add potatoes, cut into wedges, and toss until fully coated.

SECOND: WRAP IT

Wrap each potato with a slice of bacon. Keep as much cheese on the wedge as possible!

THIRD: BAKE IT

Place your bacon-wrapped goodies on a cookie sheet and bake at 400 degrees for about 35 minutes. Be sure to turn each one halfway through the cook time. When it’s finished, the bacon should be crispy and the potatoes should be tender.
