STEP 1: MARINADE
In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
Pour into a re-sealable bag and add your chicken.
Allow the chicken to marinate for 30 minutes in the refrigerator.
STEP 2: BRUSCHETTA
While the chicken is marinating, start preparing your bruschetta.
Combine diced tomatoes, minced garlic, chopped basil, lemon juice, salt and pepper.
Stir until well combined.
STEP 3: CHICKEN
When chicken is done marinating, cook each side for 5-7 minutes until cooked through.
Add slices of fresh mozzarella and allow the cheese to melt.

Top with the freshly made bruschetta mixture to complete the dish. Pair with some crusty bread or garlic bread and dig in!
