STEP 1:
First, you will need to bring ½ of a yellow onion, lima beans, thyme, and 1 garlic clove to a boil. Reduce heat and allow the ingredients to simmer for about 20 minutes.
Drain and reserve ¾ cup of the liquid. Put the lima beans aside and discard the rest.
STEP 2:
Cook the bacon in a skillet until it is nice and crisp. Allow bacon to cool on a paper towel and crumble it.
Reserve 2 tablespoons of the drippings in the skillet.
STEP 3:
Add the chopped sweet onion to the skillet and sauté over the bacon drippings.
Stir in corn and cook for about 6 minutes. Stirring often.
Then, stir in the tomatoes, cooked lima beans, and the ¾ cup of liquid from step 1. Cook for 5 minutes.
Finally, add butter, red wine vinegar, fresh dill, and chives. Stir until well combined.
Season with salt and pepper and top with cooked bacon.
