How-To Make Refreshing Popsicles with Fresh Herbs
WATERMELON BASIL POPSICLES

INGREDIENTS
- 3 cups watermelon
- ½ cup herbal syrup
- 3-4 fresh basil leaves
- ¼ cup water
- ¼ cup honey
STEP 1: MAKE THE HERBAL SYRUP
Before you create your watermelon popsicles, you need to make the herbal syrup. The syrup helps provide a better flavor, texture, and enhances freezing capabilities.
First, place water and honey in a small saucepan. Over medium-high heat, bring to a boil. Remember, always use adult supervision around hot stoves.
Let the water and honey mixture boil for 1 minute and then pour the syrup into a small heat-proof bowl.
Coarsely chop 3-4 fresh basil leaves and add it to the syrup. Stir in the herbs, making sure they are full covered. Allow mixture to sit for 10 minutes.
After 10 minutes, strain the herbs out of the syrup with a fork and let the syrup cool completely before using.
STEP 2: MAKE YOUR POPSICLES
Now that the herbal syrup is ready, it is time to make the Watermelon Basil popsicles.
Add 3 cups of diced fresh watermelon to a blender. Pulse until the watermelon is mostly liquified.
Add the basil syrup to the blender and blend on low until everything is nice and smooth. Stop blending before watermelon popsicle mixture gets frothy.
Pour into the popsicle molds and freeze until they are completely firm, at least 4 hours.

INGREDIENTS
- 3 cups lemonade
- 6 sprigs of fresh rosemary (or 1 sprig per mold)
- 1 cup orange juice
STEP 1: MAKE THE LEMONADE BASE
This homemade popsicle recipe is super easy and quick! Have you ever enjoyed a refreshing glass of rosemary lemonade? Take it to the next level with this cool summer treat.
In a medium-sized bowl, add 3 cups lemonade. You can use the lemonade of your choice, including mixes or from concentrate.
Add 1 cup of orange juice and combine.
STEP 2: ADD ROSEMARY SPRIGS
Grab your popsicle molds and start adding the rosemary. Always remember to wash your fresh herbs before using in recipes.
Place 1 sprig in each popsicle mold.
STEP 3: MAKE YOUR POPSICLES
Once your rosemary is set, carefully pour the lemonade mixture into each mold. Freeze until completely firm, at least 4 hours before enjoying!
HELPFUL TIP
If your popsicle molds come with a stick and lid, add them before placing in the freezer. If you are using popsicle sticks, do not add them right away. Let the mixture freeze for about an hour, and then add the popsicle sticks.
